Easy Rasmalai Recipe

  • Ingredients for Rasgulla:

  • 1 liter full fat milk

  • 1/4 cup lemon juice or white vinegar

  • 1/4 cup water

  • 1 cup sugar

  • 4 cups water

  • a pinch of cardamom powder

  • ready rasgulla

  • 1 liter full fat milk

  • 1/2 cup sugar

  • 1/4 cup condensed milk

  • a pinch of cardamom powder

  • a few strands of saffron

  • Chopped pistachios and almonds for decoration

Instruction: To make Rasmalai, first make Rasgulla.

Boil milk: In a large heavy-bottomed pan, heat 1 liter full fat milk till it boils. Keep stirring occasionally to prevent the milk from burning.

Strain the milk: When the milk starts boiling, add 1/4 cup lemon juice or white vinegar to it and mix it. Stir continuously until the milk curdles and the whey separates from the chenna (milk solids).

Strain the chhena: Use a muslin cloth or clean kitchen towel to strain the chhena from the whey. Gather the cloth and wash the chhena in cold water to remove the sourness of lemon juice or vinegar.

Hang the chisel: Tie the strained cloth in a bundle and hang it for about 30 minutes to remove excess water. This helps in making chhena dry and brittle.

Knead Chhena: Take out the strained chhena in a plate and knead it for 10-15 minutes until it becomes smooth, soft and sticky. It should have the consistency of flour.
